I have been making this fusion recipe since my children were toddlers and even now, as grown-up young men, they like to have it every now n then.

Back then, feeding my 2 children, that too both boys, was no less than a Herculean's task for me. At that time, this recipe of Desi quesadillas proved to be a boon for me. The same child who resisted in eating just one chapati now would have 2 quesadillas, which means 4 chapatis, easily. Trust me, at times they would go for 3 quesadillas too.

Not knowing much about Quesadillas then, we called these as Tummy Ticklers as the name only tickled them and they became eager to have food.

 

What Are Quesadillas?

Quesadillas is a Mexican dish where Tortillas are sandwiched with a filling and then cooked from the sides. And what are Tortillas? If I say in simple words, these are nothing but Chapatis, thin and slightly undercooked. What we Indians call Chapati, Mexicans call it Tortillas. Of course, there is a slight difference in terms of flour, leavening agents etc but nothing major.

These chapatis are stuffed with cheese, pizza toppings and any type of filling, be it vegetarian or non-vegetarian.

As a mother, you want to pack chapatis in your darlings lunch box. As children, they want something different in their lunch box. Something which has an oomph factor and they can impress their friends with. So, what to do? Simple, pack these Roti Quesadillas. Chapatis with an oomph factor! And, I assure you, you will get an empty lunch box when they return from school.

You can have these in breakfast or lunch or dinner.

 

How To Make 

It is a very simple process to make Roti quesadillas. Make normal chapatis. Do not put any clarified butter (ghee) on them. Sandwich the filling between two chapatis and cook on a griddle till crisp. Cut and serve. And if you have leftover chapatis then you just need to put the filling.

3 Variants Of Roti Quesadillas

Here, I am sharing 3 types of Quesadillas with you, namely:

  • Cheesy Quesadillas
  • Pizza Quesadillas
  • Chocolate Quesadillas

For all these 3 types, the base will be the same which is chapatis. You can even go for readymade Tortillas or make your own. Only the filling will be different.

Step By Step Recipe

A. Cheesy Quesadillas or Cheese Roti

  1. Take 2 chapatis. Apply tomato ketchup/pizza sauce on the inner side (That is the side where you apply clarified butter otherwise) of both the chapatis.
  2. Apply little mustard sauce.
  3. Put grated cheese on anyone chapati.
  4. Cover with the other chapati.
  5. Prick the chapatis lightly so that they do not puff up while cooking on the griddle.
  6. Put these sandwiched chapatis on a heated griddle. Apply butter and cook from both sides till crisp.
  7. Cut into triangular pieces and serve.

Cheesy Quesadillas

 

B. Pizza Quesadillas or Roti Pizza

  1. Take 2 chapatis. Apply tomato ketchup/pizza sauce on the inner side (That is the side where you apply clarified butter otherwise) of both the chapatis.
  2. Spread finely chopped veggies on anyone chapati.
  3. Sprinkle grated cheese over it.
  4. Sprinkle oregano and chilli flakes.
  5. Cover with the other chapati.
  6. Prick the chapatis lightly so that they do not puff up while cooking on the griddle.
  7. Put these sandwiched chapatis on a heated griddle. Apply butter and cook from both sides till crisp.
  8. Cut into triangular pieces and serve

C. Chocolate Quesadillas

  1. Take 2 chapatis. Apply Nutella or any other chocolate spread on the inner side (That is the side where you apply clarified butter otherwise) of both the chapatis.
  2. Sprinkle chopped nuts over it.
  3. Cover with the other chapati.
  4. Prick the chapatis lightly so that they do not puff up while cooking on the griddle.
  5. Put these sandwiched chapatis on a heated griddle. Apply butter and cook from both sides till crisp.
  6. Cut into triangular pieces and serve.
  7. Children will freak out.

Q) Can I make ahead these?

The best part of this recipe is that you can make the chapatis well ahead of time and then do the filling when required.

Q) Can I make these with Leftover Chapatis? 

With this recipe, you wouldn't mind having leftover chapatis. If you have 5 or 6 leftover chapatis then the best would be to go for Roti Noodles, Chapatis with a Chinese flavour. But if having just 2 leftover chapatis also then you can make these Roti Quesadillas.
