This Bourbon biscuits recipe is a healthy one wherein chocolate biscuits are sandwiched with chocolate buttercream and then sugar is sprinkled to give these biscuits their classic look.
I said healthy as these are made with whole wheat flour, brown sugar, and honey. No refined flour or sugar is used except a spoonful of white sugar just for sprinkling on the top.

Once you go through the recipe you will realize how simple it is to make them. It requires very few ingredients and that too readily available in your kitchen.
This is the latest addition to my recipe diary and has already won too many hearts. A super-duper hit (See the testimonials below). A few days back, while browsing the net, I happened to see this recipe. It immediately caught my attention and I decided to try it.
While making the Bourbon Biscuits though the shiny brown dough was very appealing and later the biscuits too turned out good. The taste was superb but somehow the crunch was missing. They tasted like a flat chocolate cake or say soggy biscuits. I don't know where I went wrong but I was not at all happy with the result.
The next day again I decided to try but with some changes in the recipe. Since the bug of healthy eating has bitten me too, first of all, I just replaced all-purpose flour with wheat flour. Some more tweaks here and there and yes, I got a perfect lot of Bourbon biscuits. Crunch, taste, texture.... everything was just perfect. Everybody liked it.
Before we proceed with the recipe of homemade bourbon biscuits, let us see what exactly these biscuits mean? Any specific meaning for this name or just like that?
Why These Chocolate Biscuits Called Bourbon Biscuits?
Bourbon biscuits simply mean 2 rectangular chocolate biscuits sandwiched with chocolate buttercream filling. That is chocolate all over, inside as well as outside.
As per Wiki, these Biscuits were introduced in 1910 by the biscuit company Peek Freans of Bermondsey in London. These were then known as Creola.
Later in 1930, the former French Royal House of Bourbon renamed these as Bourbon Biscuits. These biscuits are the fifth most popular biscuits in the United Kingdom.
These were introduced in India in 1955 by Britannia industries and are since then the favorite of all of us.
How To Make
- There are 2 methods to make any biscuit, the first is the creaming method and the other is the rub-in method. For making these biscuits we have used the rub-in method where all the dry ingredients are rubbed with cold butter to get coarse bread crumbs like mixture.
- Then this coarse mixture is brought together by adding little milk.
- Thereafter, the dough is kept in the refrigerator for half an hour or so.
- Then, the dough is rolled out and then cut into rectangular pieces.
- These rectangles are pricked with holes, white sugar is sprinkled to give the authentic look and then baked.
- After baking, the biscuits are allowed to cool completely. In the meantime, a simple filling is prepared is mixing butter, sugar, and cocoa powder.
- Once the biscuits are completely cool, these are sandwiched with this chocolate filling and your homemade bourbon biscuits are ready.
FAQs
Q) Any idea why there are holes in the Bourbon Biscuits?
Well, the holes are there so that the steam escapes easily while baking without causing any cracks or breaks in the biscuits.
Q) Does Bourbon Biscuits Contain Alcohol?
No! Though there is an alcohol called Bourbon but it has no relation with these biscuits. There is no alcohol in these biscuits and are thus safe for children to consume. You may read more here about this.

- Commercially, Bourbon biscuits are made with refined flour, since we are making a healthy version of it for our children, therefore, I have replaced it with whole wheat flour.
- Similarly, instead of white sugar, we have used a combination of brown sugar and honey here. White sugar is used just for sprinkling on the top that too to give an authentic look.

Bourbon Biscuits Recipe
Treat your kids with these Healthy Bourbon Biscuits made with wheat flour and brown sugar.
For Biscuits (My Cup Measures 240 ml)
- 1 Cup (130 g) Wheat Flour (Atta)
- 1/2 tsp Baking Soda
- 1/4 Cup Cocoa Powder
- 1 Pinch Salt
- 1/4 Cup Brown Sugar
- 40 g Unsalted Butter ((See Note 3))
- 2 tsp Oil
- 1 tsp Vanilla Essence
- 1 Tbsp Honey
- 1/4 Cup Milk
For Filling
- 1 Tbsp Butter
- 2 Tbsp Powdered Sugar
- 1/2 Tbsp Cocoa Powder
- 1 or 2 Tbsp Milk
To Sprinkle
- 1 Tbsp White Sugar
For Biscuits
Mix flour, salt, baking soda, cocoa powder and brown sugar.
Rub in oil and cold butter till the flour resemble crumbs.
Add honey and vanilla essence.
Add very little milk, 1/2 tsp at a time and without kneading, just gather the dough into a big ball.
Once the dough is gathered, wrap it in cling film, cover and keep in the refrigerator for 15-20 minutes.
Take out of the refrigerator and divide the dough into 2 or 3 parts. Now place one part of the dough between plastic sheets, roll it into a sheet of 1/4" thickness. Don't bother to have smooth edges.
Cut rectangles of 6" by 3" or any other preferred size with the help of a knife or pizza cutter. Collect the leftover pieces, mix it in the remaining dough and repeat till all the dough is fully consumed.
On the cut rectangles, sprinkle sugar, press a little with fingers and prick holes using a fork.
Transfer these to parchment paper and again refrigerate for 15-20 minutes, till the oven gets ready.
Preheat oven at 180 degrees for 15 minutes. Reduce oven temperature to 160 degrees and bake biscuits for 16-18 minutes.
Take out of the oven, keep it on a wire rack. Let the biscuits cool completely. Once cooled, sandwich filling and store in an airtight container. Serve with love.
For Filling
In a bowl, mix butter, icing sugar and cocoa powder.
Make a thick paste by adding milk, very little at a time. Keep it covered.
- These will be very soft on taking out of the oven. Let them cool on a wire rack, then will get crisp. Always keep them on a wire rack to prevent getting soggy from underneath.
- Apply the filling once they are cool.
- If using salted butter, then don't add salt.
- While rolling, avoid using dry flour. Place it between plastic sheets and you will be able to roll it without any difficulty.
- Can use butter paper in place of parchment paper.
- Use any oil, refined/olive/canola, or any other. I used groundnut oil. Avoid mustard and coconut oil, owing to their strong flavors.
- Please use standard measuring cups and spoons used for baking. Tbsp means tablespoon and tsp mean teaspoon.
