This Millet Upma recipe is one of the easiest and quickest breakfast recipes. It is made with boiled Varagu or Kodo millet, lots of vegetables and tempered with mustard seeds and curry leaves.
If I say that this Upma was made in just 5 minutes, will you believe me? You might say I am kidding but trust me it did get ready in, in fact, less than 5 minutes.
This became possible as I had boiled millet in my refrigerator. When I boiled Varagu (Kodo) millet, I used it first to make kebabs and kept the remaining in an airtight container in the refrigerator.
Then next day, in the morning only, I turned it into a delicious Upma with lots of veggies in it. And a healthy breakfast got ready in a jiffy. (You can have it at any time of the day)
I used Varagu millet but you can use any millet for this recipe be it Foxtail or Barnyard or any other, the method remains the same. If you use Barnyard millet then you can have it during Navratri or other fasts too.

Millets In Breakfast
Millets are wholesome and full of nutrition. We all know this and therefore it is best if we can include these in our breakfast.
Millet flour can be easily used and various breakfast items can be made from it in a jiffy like Instant Ragi Dosa or Jowar Koki.
But if we have to include whole millets then it requires a lot of time. These need to be soaked then boiled and then can be used.
But the best thing is that boiled millet remains good in the refrigerator for easily up to 3 to 4 days. So, if you have boiled millet in your refrigerator then it can be used for making various dishes like Salad or Kebab
How To Boil Millet
Before I tell you my method, I would like to say that I like boiled millet which is separated and is not sticky or mushy. For getting this type of millet, my standard method is to boil it in pressure cooker for 1 whistle with equal quantity of water. Like 1 cup water for 1 cup millet. And it is must to soak the millet before boiling it. So, the simple steps are:
- Soak millet for at least 8 hours, more the better.
- Drain this water and rinse it again in freshwater.
- Boil it in the pressure cooker with an equal quantity of water for 1 whistle.
- Wait till the steam releases and then open the pressure cooker.

How to Make
Millet Upma Is made exactly like the regular semolina Upma but the difference is that millet is not roasted like semolina. Also, using boiled millet gives quick and good results.
For making Upma, i first sauteed some veggies and then tossed boiled millet in it. And the taste was perfect. So, let us see the step by step recipe to make millet Upma.
Step By Step Recipe
A. Boil Millet
- Rinse Kodo millet in water by changing water several times till you get clear water. You get lot of brown coloured water while rubbing this millet in water.
- Soak it in enough water for a minimum of 8 hours. More the better.
- Once again rinse it in clean water.
- Add water and pressure cook it for 1 whistle.
- Let the steam settle down on its own.
- Open the pressure cooker and your fluffy boiled Kodo millet is ready. Follow the same method for any other millet too.
- Use it immediately or keep it in an airtight container in the refrigerator.
- Remains good for 3 to 4 days.
B. Make Upma
- In a wok, heat oil and splutter mustard seeds, whole red chilli, chana dal, urad dal and curry leaves.
- Saute for a while and then add green chillies, tomatoes and onions. You may add other veggies like carrots or peas. Use boiled peas if planning to use. I simply added onions and tomatoes. And that too, I chopped in the food processor so it was done very quickly.
- Saute the veggies too for a minute and add boiled millet.
- Mix in salt and lemon juice as per taste and toss everything.
- Sprinkle some crushed peanuts. You can add corn flakes or some kind of mixture also like Navratan mixture or Bhujia.
- Garnish with lots of chopped green coriander. (I couldn't as I didn't have it that day.)
- Millet Upma is ready.
- Serve with love, Lemon Lassi optional.
Variation:
- Quinoa Upma: Replace boiled millet with boiled Quinoa and your Quinoa Upma is ready.
If I do not have boiled millet, then?
Then instead of boiled millet put soaked millet in the veggies. Add 1 cup water (same quantity as millets were before soaking) and pressure cook for one whistle.

Boil Kodo Millet
- 1/3 Cup Millet (Kodo or any other)
- 1/3 Cup Water
Make Upma
- 1 Tbsp Oil
- 1/2 tsp Mustard Seeds
- 2 or 3 Whole Red Chillies
- 1/2 tsp Chana Dal
- 1/2 tsp Urad Dal
- Few Sprigs Curry Leaves
- 2 Tbsp Onion, Chopped Finely
- 2 Tbsp Tomatoes, Chopped Finely
- Salt To Taste
- 2 Tbsp Roasted And Crushed Peanuts
- 1 Tbsp Lemon Juice Or As Per Taste
Boil Kodo Millet (or Any other Millet)
