If you are using a store-bought pizza base then skip this section and straight away move to 'Make Pizza' section below.
Take fine semolina, salt, cane sugar and instant yeast in a bowl.
Add water and knead into a soft dough. I used my food processor to knead the dough.
If you are kneading by hand then knead it for at least 10 to 15 minutes till the dough stops sticking and becomes smooth.
Take out the dough, keep it in a greased bowl and turn the dough upside down so that it is well greased from all sides, otherwise the dough may dry out during proofing and develop cracks.
let it proof for an hour or till the dough doubles in volume.
(Tip: As it's very cold nowadays, so I kept the dough in the air fryer after preheating it for 3 minutes at 180 degrees C and it proofed well in exactly one hour)
Take out the dough, knead it for 30 seconds.
Divide the dough into 5 or 6 pieces.
Dust a little dry flour on the kitchen counter and roll a round pizza base. Keep the size that fits in your air fryer basket.
Keep the base thin only as it rises while baking also.
After rolling, take out the air fryer basket, put the rolled dough, and leave it for 5 minutes for second proofing.
Prick nicely using a fork otherwise, it will puff up like a balloon while baking.
Preheat the air fryer (without the basket) for 3 minutes at 180 degrees C.
After 3 minutes, insert the air fryer basket into it and bake the pizza base for 4 to 5 minutes.
The pizza base is ready. Make all other base like this.
Let it cool on a wire rack or make pizza immediately.
Once cooled completely, you can store these in a ziplock bag and keep in the refrigerator.
