Broccoli Salad Recipe

Made with one fruit, one veggie and one nut each, this salad is a delight for everyone including weight watchers.

  • 2 Cups (100 g approx) Broccoli Florets
  • 1 Piece Apple
  • 1 Tbsp Vinegar
  • 1 Tbsp Olive Oil
  • 2 Tbsp Orange Juice
  • 1 tsp Honey (or Maple Syrup, to make it Vegan)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper Powder
  • 1/4 Cup Walnuts, Chopped


  1. Wash broccoli and take out its florets.
  2. Blanch broccoli florets. For this, boil water, add broccoli. When the boil comes again, wait for a minute and drain all the water. Put the blanched broccoli in ice-cold water for 10 to 15 minutes. And then put it in a strainer to get rid of excess water.

  3. Wash the apple and dice it into small pieces, preferably of the same size as the florets of broccoli.

  4. In a bowl, take blanched broccoli and apple pieces.
  5. Add salt, pepper, olive oil, vinegar, honey and orange juice.
  6. Toss nicely.
  7. Keep it in the refrigerator at least for half an hour.
  8. At the time of serving add chopped walnuts and give it a toss.
  9. Serve with love, soup optional.

Recipe Notes

  1. The water in which broccoli is blanched, never ever let it go down the drain. Use it in soups or kneading flour.
  2. Before adding honey, pour oil into the salad. Then when you use the same spoon for adding honey it will not stick to the spoon and come out easily.
  3. Use fresh orange juice as the packaged ones are loaded with sugar thus nullifying the benefits of salad.
  4. You may skip orange juice if not handy.
