This Date Ice cream recipe with Roasted Nuts is a super easy and healthy recipe  made without using any type of sugar or jaggery or honey.

This healthy ice cream gets its sweetness through Dates and figs only. 

Sprinkling of roasted nuts lends an amazing crunchy effect to this otherwise creamy ice cream.

How to Make

A very simple and straightforward recipe where soaked dates, raisins and figs are mixed in hot milk. For thickening, oatmeal is used and it does a fantastic job. Once the dates etc are soaked then this mix along with the oatmeal is added to hot milk and cooked for few minutes. In less than 5 minutes, the mixture thickens up and that’s it.

It is then pureed and put in the freezer. Addition of nuts is completely optional.

Dates Ice Cream With Roasted Nuts

Ingredients
  

  • 12 Dates, Seedless
  • 20 Raisins
  • 6 Figs
  • 2 Tbsp Oatmeal
  • 300 ml Milk
  • 1/4 Cup Roasted Nuts

Instructions
 

  • Soak dates, raisins and figs in 150 ml milk for an hour. You may use warm milk if the weather is cold.
  • Dissolve oatmeal in 2 Tbsp milk and put the remaining milk to boil.
  • Add oatmeal mix and dates mix to the boiled milk.
  • Cook for 2 minutes or so till the mixture thickens slightly.
  • Switch off the flame and let it cool down.
  • Once completely cool, transfer this mixture into the mixer and make puree out of it.
  • Fold roasted and crushed nuts into this mix.
  • Pour the mixture in a freezer safe container.
  • Cover the container with lid or cling film to avoid crystals while freezing.
  • Freeze it for 4 to 6 hours.
  • Sprinkle few roasted and crushed nuts while serving.
  • Serve with love.

Notes

  1. Use seedless dates. If these are not available then deseed the regular dates before soaking in the milk.
  2. You can skip raisins and figs. In that case increase the dates and use roughly 16 dates.
  3. Use any milk of your choice. But milk with higher fat percentage (full cream milk) will definitely give a better taste.
  4. To make it vegan, use any plant based milk like coconut or almond or soy milk or any other.  
  5. Oatmeal is nothing but powdered oats. Grind quick oats in the grinder and oatmeal is ready.
  6. You can use any nuts of your choice for roasting. I used almonds, walnuts, cashews and peanuts.
